We do have in Czechia and Slovakia smoked bacon that fits your description, also being brutally salty But unfortunately finding it nowadays requires also some intense search and mostly it can be found on farmers´ markets Anyway, as I think there will be no Czech and Slovak shops, try to do some search in Polish shops (that I know are in London), or Ukrainian (if there are some) Our cuisines overlap a lot and you might find some "chineese" ham there 🙂

“Not supposed to be greasy for fatty”brbrI dunno, it’s a peasant dish to stretch out meals The whole point is to taste the luxury of grease and fat with every bite of your (relatively cheap) rice That’s not mutually exclusive with light flavors brGreasy/fatty as a negative connotation, imo, might be a relatively modern/western point of view At least compared to trad Shanghainese food

Love fried rice One of my favorite ingredients is Chinese sausage and especially made by Harbor in San Francisco, Cali in the states Also shrimp scallion and greens, but the most important is Thai chili, but please no garlic Finish off with cilantro the taste is fabulous with the spicy chilies Btw harbor sausage is fairly fatty too which would be a great replacement for the Virginia ham or pancetta, but less pan frying because the sausage has sugar in its curing process

I wonder if anyone at SoW has had American country ham? They are dry-cured and super salty, and often times in the south we'll soak them in Coca-Cola before cooking them Just thinking something like that might work in a fried rice because of its saltiness
